Anytime Pancakes Recipe

My youngest son loves pancakes.  I don't mind whipping up a batch anytime as it's one of the few things my picky eater will eat.  I used to whip out the box of pancake mix until a friend shared an easy breezy recipe for pancakes and now it's a standby in our home.  We're one of those "Breakfast Anytime" households so pancakes for dinner is not a rarity.

Last weekend, my son asked me why my pancakes tasted so good.  "Mommy, what's your secret ingredient", he asked.  I fumbled for an answer because I don't have a "secret ingredient.  I thought about it for a second or two and then just blurted out "Apple pie spice".  "Apple pie spice?" 

Yep, one time I was out of cinnamon so I used apple pie spice instead and the family loved it.  So without further ado, I present my Anytime Pancakes recipe and welcome you to try them.

Ingredients:

  • 1 1/4 c. all purpose flour
  • t tsp. baking powder
  • 1/4 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. apple pie spice or pumpkin pie spice
  • 1 1/4 c. milk
  • 1 egg
  • Optional:  1 tsp. vanilla 
  • Cooking spray

Directions:

  1. Sift dry ingredients and stir
  2. Add milk and egg.  Mix a bit.  Mix should be a little lumpy.  You may need to add a little more milk to get desired consistency
  3. Spray skillet with cooking spray
  4. Heat skillet or griddle over medium heat
  5. Pour about 2-3 tablespoons of batter into hot skillet
  6. Cook until bubbles appear on top of pancake and flip to brown other side 
  7. Serve with favorite syrup or fruit topping

Mix the wet ingredients in with the dry.  Batter should be a little lumpy.
Watch for bubbles.  Bubbles will appear and pop.
That's when you know it's time to flip your pancakes.
Golden brown and ready to top with your favorite syrup or fresh fruit.

I'm crazy about pancakes and I always have pumpkin pie spice in my pantry. I've never thought to add it to pancakes, but I'm definitely going to try it. I like my pancakes served with butter and just enough syrup to not make them soggy.

I just love pancakes! I need to try out this recipe. Normally I just make pancakes from a boxed mix because I'm lazy, but this seems easy enough.

Apple pie spice sounds like it could be pretty tasty. I haven't tried that in a pancake before.

I haven't had pancakes in years. They are always so heavy, but these seem like they're pretty light. I'll have to give them a try!

I love the concept of anytime pancakes. We love having pancakes for dinner. These look super yummy and fluffy.
Pancakes can be quite yummy, particularly on a chilly winter morning. I like different things on my pancakes depending on what's in them.

My daughter loves pumpkin spice, so she would be totally down with adding pumpkin pie spice or apple pie spice to her pancakes. Sounds like a yummy treat.

Ohh, I bet they were tasty! I use cinnamon in my homemade pancakes recipe, when I make them. We are breakfast anytime folks too. I've got it on the menu for dinner next week!

Oh I love the "secret" ingredient! My kids also love pancakes and always want them for breakfast. I try to make them have good and filling breakfasts but sometimes I do not have it together enough in the mornings. For those days we do pancakes for a dinner and it is a big hit in my house!

Pancakes are great anytime! We often make breakfast for dinner - it's great because my girls can make them by themselves on nights where I'm crazy busy!
