Anytime Pancakes Recipe

My youngest son loves pancakes.  I don't mind whipping up a batch anytime as it's one of the few things my picky eater will eat.  I used to whip out the box of pancake mix until a friend shared an easy breezy recipe for pancakes and now it's a standby in our home.  We're one of those " Breakfast Anytime" households so pancakes for dinner is not a rarity. Last weekend, my son asked me why my pancakes tasted so good.  "Mommy, what's your secret ingredient", he asked.  I fumbled for an answer because I don't have a "secret ingredient.  I thought about it for a second or two and then just blurted out "Apple pie spice".  "Apple pie spice?"  Yep, one time I was out of cinnamon so I used apple pie spice instead and the family loved it.  So without further ado, I present my Anytime Pancakes recipe and welcome you to try them. Ingredients: 1 1/4 c. all purpose flour t tsp. baking powder 1/4 c. sugar 1 tsp. bak

Living the Good Life at Mystic Dunes Resort and Golf Club in Orlando

I was in Orlando earlier this summer attending a conference and brought the kids and a friend along. Hubby opted to stay home since he and I are cruising to the Bahamas later this year so I invited one of my besties to join me. She and I travel for business and stay at chain hotels so I guess she was expecting a regular hotel with free breakfast. Ummmm…no-oh. Work is work and vacation is vacation.  I learned a long time ago that hotel rooms are ideal for a 1- or 2-night stay when traveling with kids but family vacations are all about luxury and Mystic Dunes Resort fit the bill. Mystic Dunes is centrally located near all the theme park attractions including Walt Disney World, Universal Studios and you can even purchase tickets at their Florida Ticket Station.   Check in was quick and the desk clerk was very knowledgeable and shared tips on getting to the local theme parks and even helped us reserve a shuttle to take me to my conference and back. She provided us with a map an

25 Tasty Recipes Featuring Asparagus

Last month we visited a restaurant and Hubby ordered cedar plank salmon topped with asparagus.  The asparagus was the saddest lil' asparagus I've ever seen.  It was overcooked, dipped in some kinda oil and such a disappointment. Asparagus is one of our favorite veggies.  It's packed full of vitamins K, C, A and folate and can be sauteed, steamed, grilled, broiled or boiled. Asparagus has a rather distinct taste - sort of a cross between green beans and broccoli.   In my search to find new and tasty ways to prepare asparagus I found lots of recipes online and I am so excited to share them with you.   Here are 25 recipes sure to delight your tastebuds.   Enjoy!
