It's back to school and time to make sure I send the kids off to school with a hearty breakfast. Breakfast is the most important meal of the day after all!
My kids tire of the same-o, same-o so I make sure to offer them lots of healthy choices. They can choose from their favorite cereals, yogurts, fruit, oatmeal and grits but one of their all-time faves is easy breakfast burritos.
We make a batch of these delicious breakfast burritos, freeze and then heat in the microwave when we're ready to eat.
- Salsa and veggies to your liking
1. Brown sausage
2. Scramble eggs
3. Add salsa and desired veggies
(we use a chunky salsa and add a few diced green peppers and onions)
4. Spoon onto tortilla
5. Fold burrito

6. Pack into freezer bags and freeze til ready to heat and heat
