I never understood why we prepare this humongous Thanksgiving dinner and complain about having so many leftovers.

We manage to get rid of a lot of leftovers by making sure everyone has a to go plate and delivering dinners to elderly and homebound family, church members and friends.  Yet, there is always a lot of stuff left.

After the last guest has left and after I’ve put away the last load of dishes in the dishwasher, it’s time to break out the freezer bags and storage containers and fill up the fridge with all the leftovers.

I like to take the turkey leftovers and make Turkey Tettrazzini (I think I spelled that wrong). You can actually freeze it and reheat it. It's super quick and easy.

Thank you for sharing the giveaway blog hop! I will check each and every one of the blogs that joined. Hopefully I win something significant. About our Thanksgiving left overs? I recycle it into a totally different dish and take it to a nursing home, or child care/adoption center.
After we have made the first slice of turkey, I set aside a big chunk of it to make turkey sandwiches which we hand out to the homeless. Sharing our blessings is one way to show our gratitude for what we have.

I make a great turkey pot pie. You use cream of chicken soup, frozen veggies,and for the crust, it is croissant rolls. It is delicious and a hit with the kids.

My dad used to make enchiladas with leftover turkey. I am fond of mixing mashed potatoes and stuffing then smothering it with brown gravy.

Well, besides turkey sandwiches, I love turkey casserole and turkey vegetable soup. Boiling up the carcass for stock takes a while, but the result is well worth it, and if I pick the meat off the boiled bones, I often get 1-2 lbs more meat for soup, pot pies, etc..

My favorite left over turkey recipe is Turkey casserole. I put shredded turkey in the bottom of a square pan, then I put the mashed potatoes and corn on top of that and then finish it by topping it with left over dressing. Bake for 10 minutes to heat it through, then cut a pieces out and top it with turkey gravy!

A Pit Stop at Sho Nuff Hot Tamales in Greenville, Mississippi

My cousin and I were driving along and our tummies were rumbling as we crossed the Mississippi state line on US-82.  We didn't really have any particular dish in mind for lunch but we started seeing signs saying "Hot Tamales". "Hot Tamales", my Philly cousin asked. "Yep", I replied nonchalantly.  "I remember reading something about hot tamales being a big thing here in the Delta."   We kept driving and finally decided we would have to try these famous Mississippi Delta hot tamales. Now to decide which one.  There were literally dozens of tamale spots.  We happened upon a restaurant called Sho-Nuff and decided it was the one. We parked and entered the large, delightfully decorated restaurant.  The wall was plastered with local and national awards in recognition of those hot tamales.   There was a sign touting Sho-Nuff as the winner of the local newspaper's favorite restaurant award and 3rd place winner in the annual  Delta Hot Ta
