5 Tasty Summer Dishes Your Kids WILL Eat

Hard to believe Summer is just days away.  Temps are already heating up and this fab mama is not one to be cooped up in some sweltering kitchen.  Now is the time to stock your pantry with items for those quick 'n easy, light 'n tasty meals even the pickiest eater will enjoy.

Chicken Salad   I love this easy 3-ingredient chicken salad recipe featured on Atta Girl Says blog.  Yes, only 3 ingredients and it can be served on a bed of lettuce, with crackers or between two slices of bread.  Tip: Pick up a rotisserie chicken from the deli dept of your local grocery store.

Salad with Fresh Fruit The chicas and I get together for lunch at least twice a month and when Summer hits, we dive into the Summer salad offerings at our favorite restaurants.  Last week I had a strawberry spinach salad with grilled chicken and it was both tasty and filling.  Strawberries and nectarines are my favorite Summer fruits - I buy them in bulk whenever they go on sale at our local farmers market - but I've been known to slice fresh fruit, put it on a dish and let the kiddos top their own salads.

Poppyseed dressing pairs well with salad greens and fresh fruit and I love Citrus Poppy Seed Dressing.  Tip:  Freeze leftover sliced fruit to use for smoothies the next day.

Hummus  My kids love hummus and I owe it all to my brother.  He has been making hummus for years and it's one of his signature dishes. He was totally surprised when I "made" hummus cucumber toast points using hummistir.

Thanks to hummustir for sponsoring this post and providing samples for our review.  As always, the views expressed are mine.  hummustir comes in a cute coated cardboard tub and is filled with everything you need to mix a family serving size of hummus including a cute wooden spoon.

Check out this video we made and see how easy it is to whip up some delicious hummus using hummustir.

Burrito Bowls The kids love burritos but notsomuch during summertime.  We found a quick and easy way to make our fave burrito bowls using microwaveable rice and pre-cooked grilled chicken strips.  A few additions of black beans, corn, salsa and toppings and tada, a delicious Summer meal the kids will eat.  Click here to check out a recipe for Easy Burrito Bowls

Kebabs Summer means trips to the amusement park and have you noticed everything is served on a stick.  Corn dogs.  Grilled chicken.  Battered veggies.  Desserts.  Everything is on a stick so why not have a little dinner fun and let the kids make kebabs. I love this recipe for Ham and Cheese Sandwich Kebabs.

These are just a few of our family faves.  I'd love to hear what's on your menu this Summer.

What are some of your tried and true Summer dishes?

Thank you for all these new ideas. It's sometimes hard to get all my kiddos to agree on the same things, this list is great.

OH YES Hummus and also burrito bowls. What a great idea. I am always needing new ideas in the summer months. It seems like fast meals are the only good meals for summer months - and BBQ of course too.
My kids love burritos. They can have it any day, regardless of the season. This summer, we're stocking up on natural fruit juices and home made popsicles. That will cool us down through the rest of the summer.

Maple and Brown Sugar Air Fryer Bacon

I've been raving about my Instant Pot but now I have a new favorite... the Air Fryer.   O M G This thing is amazing!  I don't know why I was so late to the Air Fryer craze but I am so glad I am finally onboard.   I've been talking about getting one and then after my aunt posted pics of her new air fryer, that was it off to Best Buy I went.   I wasn't sure how big of a unit I would need but I figured the 2.5 liter would suffice.  I chose the Chefman Express.  It was priced on the shelves for $85 but online for $75.99 and my local store matched the price AND I had my Swagbucks Best Buy QR code so I got 500 SBs + 2 SBs for every dollar spent so that's another 170 SBs.  So, after discounts, my air fryer ended up costing me less than the sale price.  Woohoo! There were some fancy ones on the shelves with digital display but after checking the reviews I figured since I don't fry much this model would suffice. When I think of fried foods, I think

A Pit Stop at Sho Nuff Hot Tamales in Greenville, Mississippi

My cousin and I were driving along and our tummies were rumbling as we crossed the Mississippi state line on US-82.  We didn't really have any particular dish in mind for lunch but we started seeing signs saying "Hot Tamales". "Hot Tamales", my Philly cousin asked. "Yep", I replied nonchalantly.  "I remember reading something about hot tamales being a big thing here in the Delta."   We kept driving and finally decided we would have to try these famous Mississippi Delta hot tamales. Now to decide which one.  There were literally dozens of tamale spots.  We happened upon a restaurant called Sho-Nuff and decided it was the one. We parked and entered the large, delightfully decorated restaurant.  The wall was plastered with local and national awards in recognition of those hot tamales.   There was a sign touting Sho-Nuff as the winner of the local newspaper's favorite restaurant award and 3rd place winner in the annual  Delta Hot Ta
