Hard to believe Summer is just days away. Temps are already heating up and this fab mama is not one to be cooped up in some sweltering kitchen. Now is the time to stock your pantry with items for those quick 'n easy, light 'n tasty meals even the pickiest eater will enjoy.
Chicken Salad I love this easy 3-ingredient chicken salad recipe featured on Atta Girl Says blog. Yes, only 3 ingredients and it can be served on a bed of lettuce, with crackers or between two slices of bread. Tip: Pick up a rotisserie chicken from the deli dept of your local grocery store.
Salad with Fresh Fruit The chicas and I get together for lunch at least twice a month and when Summer hits, we dive into the Summer salad offerings at our favorite restaurants. Last week I had a strawberry spinach salad with grilled chicken and it was both tasty and filling. Strawberries and nectarines are my favorite Summer fruits - I buy them in bulk whenever they go on sale at our local farmers market - but I've been known to slice fresh fruit, put it on a dish and let the kiddos top their own salads.
Poppyseed dressing pairs well with salad greens and fresh fruit and I love Citrus Poppy Seed Dressing. Tip: Freeze leftover sliced fruit to use for smoothies the next day.
Hummus My kids love hummus and I owe it all to my brother. He has been making hummus for years and it's one of his signature dishes. He was totally surprised when I "made" hummus cucumber toast points using hummistir.
