I've been raving about my Instant Pot but now I have a new favorite... the Air Fryer.  
O M G This thing is amazing!  I don't know why I was so late to the Air Fryer craze but I am so glad I am finally onboard.  

I've been talking about getting one and then after my aunt posted pics of her new air fryer, that was it off to Best Buy I went.  

I wasn't sure how big of a unit I would need but I figured the 2.5 liter would suffice.  I chose the Chefman Express.  It was priced on the shelves for $85 but online for $75.99 and my local store matched the price AND I had my Swagbucks Best Buy QR code so I got 500 SBs + 2 SBs for every dollar spent so that's another 170 SBs.  So, after discounts, my air fryer ended up costing me less than the sale price.  Woohoo!

There were some fancy ones on the shelves with digital display but after checking the reviews I figured since I don't fry much this model would suffice.
When I think of fried foods, I think of fried chicken and bacon.…

Seems like just yesterday we were chillin' in a hammock on a beach sippin' margaritas in Cozumel.  Really, I was just chillin' in a hammock on a beach sippin' margaritas in Cozumel just a couple of weeks ago and now it's Fall and it's all about the pumpkin spice.

I had to share this super easy take on the $$ pumpkin spice latte at the the ooh la la, fancy-schmancy, trendy coffee houses.  Save your money and make it at home.  Shoot, they're cheap enough you can enjoy a few of these without bustin' your budget.
Ingredients:

1/2 tsp. pumpkin pie spice2 tsp. vanilla2 tbsp. pumpkin puree1 1/2 c. almond milk, soy milk or milk of your choiceSugar to taste1/2 cup expresso or really strong coffee
Directions:

Pour pumpkin pie spice, vanilla, pumpkin puree in a saucepan over medium heat and stir til mixed well and heated throughout.  You want to make sure the pumpkin mix is nice and smooth.  No one likes a chunky latte.Stir in milk…

Rain, Rain Go Away Giveaway Hop

A few years ago, my kids’ beloved Art teacher passed away. I remember trying to explain the loss to them and they didn’t quite understand. I tried to minimize the harsh reality that their teacher had died. That’s what we tend to do sometimes as parents. Fortunately our school counselor had plenty of resources to help us parents help our kids to understand the loss and help with the grieving process.

One of the resources was a book titled “The Memory Box” by Joanna Rowland. I recently saw the book is still available and now has an accompanying journal. A place to document the memories of a loved one. Joanna’s book helped me guide my children through the grieving process and the fact that the school counselor recommended it made me feel even better. What a wonderful pairing. Not only can you learn about tools to help with the grieving process but you can also create memories to help with the process. Healing through words AND actions.
