BLT Salad A Light Summertime Meal or a Tasty Side Salad #ad #NSNation

 
Bacon makes EVERYTHING better!  When I started on Nutrisystem I was afraid I would have to give up all the foods I love - including bacon - but the truth is I can enjoy ALL of my favorite foods - INCLUDING BACON.

Of course I can't go hog wild, no pun intended, but I can have a slice or two every now and then without throwing a wrench in my weight loss plan.  In my efforts to get a little creative on my Flex Day I try to put a healthier spin on some of my fave foods including the trusty BLT.
 
This fab mama loves a BLT piled high with crispy bacon, iceberg lettuce and vine-ripened tomatoes so when I was making BLTs for the fam I decided to create a salad using those same ingredients. 
I'm not a huge fan of turkey bacon but I figured 4 slices of bacon, crumbled into small pieces equals 1 slice per serving and that's okay.

While on Nutrisystem I can enjoy unlimited veggies and since it's Summer, I'm enjoying the bounty of fresh produce available at our local farmer's market.

I picked up a couple of tomatoes the other day.  One of them was a little green but that's okay.  There's a tad of firmness and a slight bitterness that pairs well with the crispy, salty bacon.

It wouldn't be a BLT without lettuce and even though there's nothing like the crunch of iceberg lettuce on a BLT, iceberg lettuce is exactly the best choice when it comes to lettuce.  In fact, iceberg lettuce pales in comparison to other dark, leafy greens like romaine and my favorites, red and green leaf lettuce.

A general rule of thumb to remember when buying lettuce is the darker the green, the higher the nutritional value.

I decided to mix iceberg and green leaf lettuce for this recipe. 
 The recipe is simple. 
  1. Crisp the bacon, cut into small pieces and pour into a large bowl
  2. Slice the tomatoes and pour into the bowl
  3. Cut the lettuce into bite size pieces and pour into the bowl
  4. Toss all the ingredients and serve.
*I add a little pepper for an added flavor boost and enjoy with a light oil and vinegar vinaigrette.

**Oh, you'll also notice I added some zucchini in my salad.  Hey I went a little veggie crazy at the Farmers Market and zucchini and cucumbers are my new croutons. I love the crunch and the flavor they add to my favorite salads.

I love BLT's! Anything that I can throw bacon on I consider it a win. I love that if I throw it into a salad I can consider it healthy. This is a great idea.

Making salads is always easy in the summer. All I have to do is walk out to my garden and start picking. We always add bacon. For us this is a full meal.

I love a good salad! I love the idea of a BLT salad! Cuts out the bread you would use for a BLT sandwich, which, let's be honest, they're unwanted/unneeded carbs!

What a fantastic idea for a summer side salad, I do love BLT sandwiches but I have never for some reason thought about turning it into a salad.

My daughter has Celiac Disease and doesn't like to spend money on gluten fre ebread that doesn't taste good. She makes BLT salads a lot. Yum!
My husband just loves salads. I love the combination of bacon and tomato together, it;s a favorite.

I love bacon, this is a great balance of healthy and not. Lol Thatvwas a great leaf choice tip, I didn't know that. I will keep it in mind when buying lettuce.

What a great way to make salad more delicious and bacon more nutritious. I’d give this a try.
As soon as I saw the word "bacon," I was sold. Saved the recipe immediately and my mind was just looking forward to dinner. This will be a win with my family.

I am a fan of the BLT Sandwich, but haven't had it like a salad before. I do like the flavor that bacon adds to a meal like this. And, I have grown to enjoy turkey bacon. I think it depends on the brand you buy – some are way better than others.
