The Fall harvest of full of hearty veggies and sweet potatoes are one of my favorites.  Sweet potatoes are so versatile and you can make everything from appetizers to entrees to desserts. This time of year, the harvest is plenty and the price is low.  I saw sweet potatoes at only 30 cents/ lb. 

Oh, why sweet potatoes you ask?  Well, a friend gifted me with a couple of tubers from her garden.  They're HUMONGOUS! 



I love sweet potatoes.  They're full of vitamins, iron and calcium and they're naturally sweet.

To showcase the versatility of this beloved plant, I decided to share a few of my favorite quick 'n easy recipes featuring sweet potatoes.

Sweet Potatoes are a favorite at my house! I always make a sweet potato casserole for Thanksgiving. I love hummus, yet I've never made it with sweet potatoes before - yum!

Since we have never had sweet potato chocolate pudding I am very interested to see how this taste. Plus it is chocolate pudding and the family doesn't have to know there is sweet potato in it until after they eat it.
Oh nom nom nom! I love sweet potatoes and am always looking for a different way to use them. They are a MUST at our Thanksgiving table.

I am going to have to try all of these. My mom doesn't like sweet potatoes so I never grew up with them, but I really like them!
