Last week our local grocery store had pineapples on sale for $1. I had to grab a few for the youngest of Los Tres Amigos. This kid is a pineapple fanatic. Seriously one year Hubby and I gifted him with a pineapple corer as a stocking stuffer and he still proclaims it as his "best gift ever". Yep, a pineapple corer.
During a recent trip to Mississippi, my cousin shared a recipe for roasted pineapple and I couldn't wait to get home and try it. It was so simple I kept asking her to repeat it because I've seen recipes for roasted pineapple calling for brown sugar, cardamon, cinnamon and a bounty of other spices, but her recipe called for a single ingredient --> PINEAPPLE. Yep, one pineapple and that's it.
Ingredients:
Pineapple
Directions:
- Preheat oven to 325 degrees
- Rinse pineapple
- Cut off the crown of the pineapple (the green leafy top)
- Place pineapple on a baking sheet and bake for about an hour
- Allow pineapple to cool completely and then peel the rind/eyes and slice
