Now that Summer is over and the kids are back in school our mornings are pretty much rush, rush, rush.  We live for weekend breakfasts.  It's a time when we can sleep in and wake up around brunch.  No rushing.   Weekends are a great time to prepare our favorite   breakfast casserole.  I like to prepare the casserole fixins' the day before and then wake up, pour the mix into a casserole dish and bake. The kids are back in school and we are back to the hustle and bustle of another school year.  I am so excited as I have a high school senior this year and we are looking forward to a banner year!
