How to Make Great Northern Beans in the Instant Pot

I have been on a cooking frenzy ever since I bought my Instant Pot a few months ago.  There are many different Instant Pots to choose from but I settled on the 6 quart Lux V3 model.  It has 12 pre-programmed cooking modules and a delayed start feature and it was on sale at Amazon.
For those not familiar with the Instant Pot it is a countertop electric pressure cooker.  The Instant Pot replaces 6 common kitchen appliances including: Pressure Cooker, Slow Cooker, Rice Cooker, Sauté, Steamer, and Warmer.

This pressure cooker can be used for everything from boiling eggs to roasting chicken and so much more.  Now that Amazon has free shipping for EVERYONE now is a great time to buy an Instant Pot.


Now that the weather is getting colder I am looking forward to preparing beans, stews, chili and more using our Instant Pot.

Last weekend, I tried a new recipe for Great Northern Beans.  Great Northern are my absolute favorite bean.  They have a mild flavor and sometimes used to make baked beans.  The flavor reminds me a bit of cannellini beans. When cooked they kinda have a creaminess to them.
Normally, I soak the beans overnight and then drop them in the crock pot for about 6 hours or longer.  It's a long process but it's so worth it.  The beans are so tasty on a cold day and whip up some cornbread and you've got a delicious, affordable meal. 

I have been experimenting more and more with my Instant Pot and came across a recipe for Instant Pot Great Northern Beans. I was a little skeptical since the recipe did require soaking overnight and the beans would cook in 40 minutes.  Well, it did and the beans turned out absolutely PERFECT!



Ingredients


  • 1 lb. dry great northern beans


  • 1 tsp. salt


  • 6 cups water


  • 1 slice bacon (optional)


  • Instructions

    1. Add water, beans, salt and bacon to the inner cooking pot. Stir. 
    2. Close the lid and set steam release to Sealing position.
    3. Cook on High Pressure for 40 minutes. 
    4. Open the pressure valve to do a "Quick Release".  
    *If the beans aren't cooked to your liking.  Replace the lid, set valve to Sealing and cook on high for another 5-10 minutes.  Repeat to desired tenderness.
