Now that Summer is over and the kids are back in school our mornings are pretty much rush, rush, rush. We live for weekend breakfasts. It's a time when we can sleep in and wake up around brunch. No rushing.
Weekends are a great time to prepare our favorite breakfast casserole. I like to prepare the casserole fixins' the day before and then wake up, pour the mix into a casserole dish and bake.
The casserole is full of everyone's favorite breakfast stuff: sausage, eggs, cheese and bread. The best part is you can make the recipe your own by using your favorite sausage, cheese and bread. We tried turkey sausage, pork sausage, Monterrey jack cheese, cheddar cheese, honey oat bread and a delicious cranberry orange bread which was absolutely delicious.
Funny how that works isn't it? You find a recipe. You make it exactly according to directions and then after making it a few times you make it your own.
This recipe didn't call for tomatoes, but one day I added tomatoes and guess what the kids loved it. This breakfast casserole is one my kids like to help make. Although I slice the bread, sometimes I just let the kids rip the bread into bite size pieces. Who cares if the pieces are uniform. Does it really matter?
Ingredients
1 pound sausage
12 slices bread (diced and cubed or just torn into bite sized pieces)
1 onion finely chopped
12 oz. fave cheese
6 eggs
1/4 cup milk
Instructions
Brown sausage and drain. Pour bread into large casserole dish (9 x 13 or so). Pour onion, cheese, eggs and milk into bowl and stir. Cover and refrigerate (overnight if possible).
When ready to cook, preheat over to 375 degrees and bake for 45 mins. Serve.

I think that's another reason why I enjoy baking this breakfast casserole. You can just dump everything into the casserole dish and bake immediately. Or you can slice and dice and stir and pour and let it marinate overnight and bake the following day. This easy to make casserole is one your family will enjoy for breakfast, brunch, lunch or dinner. It's delicious anytime.
